Primal Bacon Meatloaf

When I was growing up, one of my favorite things was my mom's meatloaf. Stuffed with cheese, and so delicious. I now realize how bad it was for me, but I still think I could demolish an entire pan by myself. Fortunately, I now found a way to eat meatloaf and not hate myself the next day!

I used a lot of the same ingredients my mom would use in her meatloaf, and sprinkled in a few Primal changes for myself. We passed on the cheese inside, but depending on your diet (Paleo, Primal, Keto, etc.) you could definitely through some cheese in the middle of this great recipe!

Primal Bacon Meatloaf

INGREDIENTS

  • 2 Pounds Lean Ground Beef
  • 1 Pond Bacon
  • 2-3 Medium Carrots, Chopped
  • 1 Cup Chopped Mushrooms
  • 1/4 Cup Chopped Sweet Onion
  • 1 Tsp Minced Garlic
  • 1 Cup Almond Meal or Flour
  • 1/2 Tsp Sea Salt
  • 1/2 Tsp Black Pepper

 

INSTRUCTIONS

1. Preheat oven to 350 degrees

2. Mix all ingredients (EXCEPT bacon) in a large mixing bowl

3. Pour/form the mixture in a 9x5 loaf pan, etc.

4. Cut bacon strips in half and layer on top of meatloaf as evenly as possible (you may not use the entire pound, but why not try!)

5. Bake for 60-90 minutes

6. OPTIONAL - Use broiler to brown and crisp bacon topping
