Primal Chicken and Waffles

My first introduction to "chicken and waffles" as one meal came from The Fresh Prince of Bel Air. It was referenced several times, and it was even included in Will's description of Heaven. Turns out, something I originally thought was a strange combination is one of my FAVORITE dishes to eat. Ever.

Chicken and waffles was absolutely a contributing factor to me weighing over 300 pounds at one point. The fried chicken, butter, syrup, and that's not even mentioning the what was in the waffle itself. After a little time in the kitchen, I've found a Primal way to satisfy a constant craving.

Primal Chicken and Waffles

 

INGREDIENTS

WAFFLES

  • 8 Eggs
  • 1/2 Cup Melted Ghee or Coconut Oil
  • 1/2 Cup + 1 Tbsp Coconut Flour
  • 1 Tbsp Cinnamon
  • 1 Tsp Vanilla Extract
  • 1/2 Tsp Sea Salt

FRIED CHICKEN

  • 4 Boneless Skinless Chicken Breasts

BATTER

  • 5 Tbsp Coconut Milk
  • 5 Tbsp Ghee
  • 1 Tbsp Tapioca Flour

BREADING

  • 1/2 Cup Tapioca Flour
  • 1/2 Cup Almond Meal (you can use almond flour if you prefer the blanched flour)
  • 1 Tsp Sea Salt
  • 1 Tsp Black Pepper
  • 1/2 Tsp Chili Powder
  • 1/2 Tsp Garlic Powder

 

EQUIPMENT

  • 2 Medium Mixing Bowls
  • 1 Large Mixing Bowl
  • Baking Sheet
  • Baking Rack or Foil
  • Waffle Iron

 

 

INSTRUCTIONS

 

Start with Chicken...

1. Preheat oven to 400 degrees

2. Cut chicken breasts into strips

3. In a mixing bowl, combine BATTER ingredients and microwave for 1-2 minutes

4. Remove BATTER from microwave and mix until smooth

5. In a separate mixing bowl, combine BREADING ingredients and mix

6. Place a baking rack on a baking sheet or line it with foil

7. Dip chicken tenders in BATTER, then into BREADING, and place on baking sheet

8. Bake chicken for 30-45 minutes or until chicken is golden brown and internal is 165 degrees

9. While the chicken is baking, begin the waffles (don't worry, it's easy from here)

 

Waffles Next...

10. Whisk eggs in a mixing large mixing bowl

11. Add melted ghee/coconut oil, cinnamon, vanilla extract, and salt - mix

12. Add coconut flour to mixing bowl and mix into thick batter

13. Spoon mixture into heated, greased waffle iron and cook until done (2-4 minutes)

14. Serve with Primal/Paleo ketchup; maple syrup; or another Primal/Paleo topping, sauce, etc.


This looks like a whole bunch of work, but it's really not bad. Takes about an hour from start to finish for me, and I get distracted easily and often. It's worth any effort it takes in my opinion, and I can't wait to have this every week. Maybe twice...
