Primal Stuffed Chicken

I may have purchased too much chicken because it was on sale, and this may be first of many chicken recipes to come. My wife pointed out that my recipes are very similar, so this is unlike anything I've posted before. This stuffed chicken breast is easy, and allows some wiggle room on the ingredients so you'll most likely already have everything you'll need!

Something I really enjoy about this recipe is that it's a complete meal alone if you want it to be - no need to prepare anything else. Chicken, stuffed with bacon and sauted greens of your choice. Let's jump right in!

Primal Stuffed Chicken



  • 4 Chicken Breast
  • 6 Strips of Bacon
  • 4 Cups Fresh Spinach, Kale, etc.
  • 2 Cloves Garlic - Minced
  • Black Pepper & Sea Salt to taste



1. Preheat oven to 350 degrees

2. Cut chicken in half, leaving it connected

3. Flatten chicken breast between sheets of plastic wrap

4. Heat skillet or pan over MED-HIGH heat

5. Cook bacon until crispy, remove to drain (leave bacon grease in skillet/pan)

6. Add garlic, sea salt, black pepper, and fresh greens to skillet/pan, and partially saute

7. Remove partially sauted greens and place in mixing bowl

8. Chop bacon, add to bowl with greens, and mix well

9. Spoon mixture evenly into each chicken breast

10. Fold chicken breast over and pin shut with a toothpick

11. Bake in oven for 20-25 minutes, or until no pink remains in chicken

I used spinach, and my wife actually used broccoli! Get creative with some veggies from your kitchen and who knows what you'll create!
