Cauliflower "Tater" Tots (low-carb, keto)

It's time to have a really honest conversation... tater tots are superior to french fries. There, I said it.

I used to think tater tots were permanently off the menu, but then I learned about a little thing called cauliflower. I've used cauliflower to make mashed "potatoes" and even pizza crust, but this "tater" tot recipe takes the cauliflower cake. Wait, is there such thing as cauliflower cake!?

Ingredients

  • 2 1/2 cups riced cauliflower, cooked & cooled
  • 2 large eggs
  • 1/3 cup shredded cheddar
  • 1/3 cup shredded mozzarella
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp onion powder

Instructions

1. Make sure riced cauliflower is cooked and cooled before beginning the rest of the recipe
2. Preheat oven to 425°
3. Line a baking sheet with pachment paper
4. Mix ALL ingredients in a mixing bowl
5. Use a 1 Tbsp measurement to form tots (I made 16)
6. Bake for 25-35 minutes or until golden brown and firm
7. Serve!
