Cheesy Bacon Dijon Pork Chops (low-carb, keto)

My love affair with pork chops continues. And this time, there's bacon.

The different flavors in this recipe combine to create a truly awesome pork chop. Cheddar cheese melted on top of bacon. That bacon hiding a dijon covered pork chop. I can't explain how delicious this is, so just try it for yourself!


  • 1 pound boneless pork chops (for me that was 2 pork chops)
  • 4 slices bacon
  • 2 Tbsp dijon mustard
  • 2 oz sharp cheddar cheese
  • Salt, pepper, & garlic powder to taste


1. Preheat oven to 400°F
2. Season pork chops to your liking
3. Place pork chops on a foil lined baking sheet
4. Spread dijon mustard evenly on all pork chops
5. Place 2 slices of bacon on each pork chop in an "X" pattern
6. Bake for 30-40 minutes or until internal temperature reaches 145°F
7. Top each pork chop with 1 oz of cheddar cheese
8. Bake for an additional 5-10 minutes to melt the cheese. You could even use the broiler on this step
9. Serve!
