Taco Pie (low-carb, keto)

I love tacos, but I get sick of having the same old thing all the time. 

You may have already seen my Taco Pizza recipe in my early days, but this is even better! It's a simple, delicious recipe that captures all the best flavors of a taco. Serve with all your favorite taco toppings and you may never go back to boring old tacos again!

Ingredients

  • 1 Pound Ground Beef (I actually used 18 oz, so make sure to adjust your nutritional info accordingly)
  • 10 oz Diced Tomatoes with Green Chilies
  • 1 Batch of my Taco Seasoning (or your preferred taco seasoning)
  • 1/2 Cup Sour Cream
  • 1 1/4 Cup Shredded Mexican Blend Cheese, divided

Instructions

1. Preheat oven to 350°F
2. Cook ground beef over MEDIUM heat and add taco seasoning
3. Drain most of the liquid from the tomatoes and green chilies and add to pan with ground beef and mix
4. Add sour cream and 1/4 cup of cheese and mix
5. Pour mixture into a pie dish and top with remaining cup of cheese
6. Bake about 15 minutes, or until cheese is completely melted and slightly browned
7. Slice and serve!
