Apple Cinnamon Muffins (Primal, Paleo)

I'm always on the hunt for higher carb snacks for jiu-jitsu and other rough workouts. These apple cinnamon muffins are perfect for just that! And for dessert. And for breakfast. And as snack. Alright, they're just perfect!

October coming means three of my favorite things: Halloween, my birthday, and apples. I love apples, so I went to work trying to find a way to use them before apple picking season. This muffin recipe is awesome, and it'll be a staple in my house all Fall long!

  • 1 cup applesauce
  • 1/2 cup coconut flour
  • 6 eggs
  • 3 Tbsp cinnamon
  • 1 tsp baking soda
  • 1 tsp vanilla
  • 1/4 cup butter (coconut oil for strict Primal/paleo)
  • 2 Tbsp Honey
  • 3/4 cup diced apples (I used honeycrisp)

1. Prheat oven to 400°F
2. Grease a muffin pan or use those muffin paper cup things...
3. Mix ALL ingredients into a nice, even batter
4. Let the batter sit for 5-7 minutes
5. Spoon equal amounts of batter into 6 equal portions
6. Bake for 25-30 minutes or until the tops are brown and stiff
7. Cool for 5-10 minutes and serve!
