I've been experimenting with mashed cauliflower since I went full on Keto. After more failed attempts than I'd like to admit, I think I finally found the one. The mashed cauliflower recipe that tricks my picky wife and pickier kids. The mashed cauliflower recipe that pushed me over my daily calories because I couldn't resist seconds.

- 16 oz Cauliflower
- 3/4 Cup Parmesan Cheese
- 1/3 Cup Sour Cream
- 3 Cloves Minced Garlic
1. Cook cauliflower via preferred method until tender
2. Blend ALL ingredients together in food processor, blender, bullet, etc.
